Rainy days and Mondays always feel the same.

Good Morning, happy Monday!
I need to clarify my acceptance into the University of Utah. I've been accepted to the U itself but I need to up my GPA to be accepted into the business school. That's why I need a better transfer GPA.

I love conference weekend, I get a break from primary and I get to listen to the apostles in my pajamas. Life just doesn't get much better than that. The only thing that made it less than perfect was that Nate is still sick.
I've noticed nothing can make a big strong man turn into a two year old quicker than a cold. Poor Nate has been sick for over a week and it's wearing us both down. I just hope I don't get sick too, he doesn't have the patience that I have :).

I want to share a new favorite recipe with everyone. This idea is from Joce's aunt Kathleen (who I saw singing with MoTab at Conference). Nate is a very picky eater but this is one of his favorites:

Breakfast Casserole

-Boiled potatoes (as many as you think you'll need to fill a casserole dish and your family)
-3 or 4 eggs
-Grated cheese
-Slices of ham
-Seasoning

Remove skin from the potatoes and cut into slices. Place in casserole dish and add seasonings. Mix eggs and 3/4 grated cheese (I like to add a little bit of ham also) pour mixture over the potatoes. Bake at 400 degrees until eggs are almost cooked. Take out of oven and put slices of ham and cover with the rest of the cheese. Broil until browned.

I know it's a simple recipe but I find that picky people like things simple. Give it a try, play with it, have fun!

That sounds good, Haley. Do you use lunch meat ham or real ham? I guess real ham would be ideal. I'm glad you had a break from Primary. Primary president is on my list of callings to avoid. Actually, the only calling not on my list is ward chorister. I've always wanted to be ward chorister but never been called. Oh well, my day will come!

That was pretty good, wasn't it? Did you know that was my aunt's last time singing at conference? She's retiring this summer after 20 years in the choir! I don't know what I'll do at conference afterward. I feel like I've been trying to spot her during the songs all my life.

I love simple easy recipes.. Thanks.Nate should go to the doctor. Judd men just hold out way too long. Bob had a cough for 3 weeks before he got sick enough to consider going to the doctor...by then it had turned into pneumonia.Love you
